Apple-Raisin Pork Loaf

 

1/4 cup quick cooking oatmeal (not instant)

1 egg white

2 tablespoons raisins

1 teaspoon mustard

1 tablespoon onion (minced)

1/4 teaspoon black pepper

3/4 teaspoon salt

1 lb. lean ground pork

8 oz. unsweetened applesauce

1/8 teaspoon ground cinnamon

 

Preheat oven to 350˚  In a medium bowl,  slightly beat the egg white, and stir in the raisins, oats, onion, mustard, salt, pepper and 1/4 cup of the applesauce.  Add the pork and mix well.  Shape the mixture into a 6"x6" loaf pan, than place the loaf pan in an 8'x 8"x2"  baking pan.

 

Bake about 55minutes, or until well done and the meat is no longer pink.  Allow meat to sit for 10 minutes before slicing.

 

In a small saucepan combine the remaining applesauce and cinnamon, and heat (do not boil).  Transfer meat to a serving platter and slice.  Top each serving with the heated applesauce. 

  


Makes 6 Servings

Per serving:  240 calories; 20g protein; 10g fat; 21g carbohydrate; 487 mg sodium; 58 mg cholesterol , 392 mg potassium
