Green Beans with Cashews

1 pound green beans, trimmed and broken into 1-inch
lengths
1 tablespoon olive oil
1/2 red onion, slivered
1 /2 cup mushrooms, sliced
1/3 cup cashews, unsalted
1/4 teaspoon salt
1/4 teaspoon black pepper
Place green beans in a pot of boiling water for 5
minutes. Drain beans and place in a bowl of ice cold water, drain and set
aside. In a large skillet, heat olive oil over medium-high heat for 30
seconds, add onions, mushrooms, cashews, salt and pepper. Stir-fry for 2-3
minutes or until onions are softened. Add green beans to mixture, raise
heat to high and continue to stir-fry for about another 3 minutes.
