Italian Scramble

1 teaspoon extra virgin olive oil
1/4 cup chopped green pepper
1/4 teaspoon oregano
1 tablespoon grated parmesan cheese
1 clove garlic, minced
1/4 cup chopped tomato
2 eggs, beaten
Heat the oil in a skillet. Sauté
the garlic and green pepper until translucent. Add in the tomato and
oregano. Simmer one minute. Mix the parmesan cheese with the eggs
and pour into the skillet and cook until set.
