Peanut Shrimp & Vegetable Stir Fry

STIR FRY SAUCE (mix ahead and set aside)

1/4 cup lite soy sauce

1 clove garlic, minced

1 teaspoon brown sugar

1/4 cup dry sherry

1 tablespoon ginger powder

 

 

1 tablespoon peanut oil

2 cups stir fry vegetables:

 (1/2 cup carrot, 1/2 cup broccoli, 1/4 cup water chestnuts,

 1/4 cup red pepper, 1/2 cup pea pods/snow peas)

2 tablespoons dry roasted peanuts

20 medium sized peeled shrimp (fresh or frozen)

2 tablespoons dry roasted peanuts

1/4 cup fresh pineapple

 

Heat oil in skillet or wok.  Put vegetables and shrimp in skillet.  Stir fry on medium-high heat 5-10 minutes or until shrimp are cooked (if frozen, until they are hot).  Vegetables should be tender and crisp.  Stir in stir fry sauce, mix well and serve.
