Pizza on
the Barbie
Four 6" pita pockets or 4 flatbread shells
One 3 1/2 oz package goat cheese
16 Greek black olives, pitted and cut in half
1 cup shredded low-fat Mozzarella cheese
1/2 cup shredded Parmesan/Romano cheese
4 plum tomatoes, sliced
1 tablespoon chopped fresh basil
Do not slice the pita pockets -- leave whole.
Spread goat cheese evenly on each pita and top with olives, plum tomatoes
and the shredded cheeses. Place a sheet of heavy duty aluminum foil on the
grill. Place the pizzas on the foil and grill, covered, about 4 to 6
inches from heat for 8-10 minutes, until the crusts are medium brown, vegetables
hot and cheese is melted. Sprinkle the basil on each pizza and serve.
